Ingredients
- 2 Lg Cans Pineapple Chunks
- 1 Lg Can Tangerines
- 1 Sm Jar Maraschino Cherries
- 1 Bunch Red Grapes, cut in half and seeded
- 1 Bunch Green Grapes, cut in half
- 2 Oranges, peeled and sliced
- 1 Banana, peeled and sliced
- ½ cup Sugar
- 1 dollop Butter
- 1 heaping Tbsp Flour
- 2 Eggs
- 1 cup Whipping Cream
Directions
1. Drain: juice from fruit cans and place in 1 qt sauce pan along with butter. |
2. Heat: juice and butter mixture over low heat until its not quite boiling. |
3. Mix: sugar, flour and eggs (beaten a little) in small bowl. |
4. Add: small amount of juice to this mixture and stir until its smooth. |
5. Add: mixture back into sauce pan and slowly bring to a boil until it thickens. Stirring constantly so it does not burn! When it thickens (like hot custard), cover and set aside in refrigerator. |
6. Mix: pineapple chunks left over from above, with oranges, tangerines, grapes and cherries together in large bowl and set aside in refrigerator. |
7. Whip: cream and set aside in refrigerator. |
8. Mix: custard, whipped cream and fruit mixture together after it has cooled in refrigerator. |
9. Add: sliced banana just before server (to keep them from browning). |
10. Store: in refrigerator until ready to serve. |
For those who do not like Pineapple, you may substitute 2 large cans of Pears for the 2 large cans of pineapples. |
The salad can be doubled for Christmas. |
